Bacon-Wrapped Dates Stuffed with Chevre

Creamy, tangy goat cheese inside sweet & mineral-rich Medjool dates, wrapped in thick slices of bacon and slow-baked until the bacon melts in your mouth.

  • The night before your plan to make the dates, soak the toothpicks in water. This helps to prevent them from burning in the oven.
  • The next day, take one date and use a knife or your fingers to remove the pit.
  • Discard the pit, then stuff the date with plenty of chevre.
  • Repeat discarding pits and stuffing dates until all dates are stuffed.
  • Slice the bacon into thirds.
  • Wrap one piece (1/3 of 1 piece) of bacon around 1 stuffed date and secure it with a toothpick.
  • Repeat until all stuffed dates are wrapped with bacon and secured with toothpicks.
  • Sprinkle dates lightly with coconut sugar.
  • Bake the dates at 300℉ for 30-45 minutes or until bacon is cooked but still retains juices and fat.

Notes

This recipe is pretty fool-proof; the only real risk is overcooking and drying out the bacon, so keep a close eye on your baking time and try to bake on low heat. Similarly, if left in a crockpot on warm, these delicious appetizers can dry out.  To prevent this, consider making a simple sauce of fresh rosemary, honey, red wine vinegar, and pastured butter to drizzle over the dates!
