Cacao, Date, & Avocado Chocolate Mousse

Cacao, Date, & Avocado Chocolate Mousse

  • Add dates to a large (7-cup) Pyrex storage container and allow to soak for 8-12 hours.
  • Halve avocados; remove and discard pits.
  • Add soaked dates and half the avocados to food processor or blender.
  • Process dates and avocados until well-blended, adding ½ remaining avocados at a time.
  • Add 1½ cups of raw cacao powder and begin blending. If necessary, continue adding cacao powder until mixture becomes thick and creamy.
  • Taste mousse; if avocado taste is too prevalent, add maple syrup until it reaches preferred level of sweetness.

Notes

I recommend writing down the ratios of dates to avocados that you use each time you make this recipe.  The goal is to reach the perfect ratio where the sweetness of the dates is foremost on your tongue rather than the avocado. 
Increase the amount of dates as necessary, but remember they need to be soaked to maintain optimal texture.  If you find your mousse tastes too much like avocado, simply add maple syrup a little at a time and taste until the mousse reaches your preferred level of sweetness.
