Bacon-Wrapped Dates Stuffed with Chevre
This is my go-to appetizer for Christmas parties, baby showers, or even dinner parties. It’s not difficult, but it is time-consuming. For me, the quality of the ingredients and the taste are worth it. Plus, it can be made ahead of time and freezes/defrosts well.

Bacon-Wrapped Dates Stuffed with Chevre
Equipment
- 1 butter knife
Ingredients
- 2 lbs Medjool dates
- 2 lbs thick-sliced applewood smoked bacon
- 8 oz plain chevre
- coconut sugar for sprinkling
Instructions
- The night before your plan to make the dates, soak the toothpicks in water. This helps to prevent them from burning in the oven.
- The next day, take one date and use a knife or your fingers to remove the pit.
- Discard the pit, then stuff the date with plenty of chevre.
- Repeat discarding pits and stuffing dates until all dates are stuffed.
- Slice the bacon into thirds.
- Wrap one piece (1/3 of 1 piece) of bacon around 1 stuffed date and secure it with a toothpick.
- Repeat until all stuffed dates are wrapped with bacon and secured with toothpicks.
- Sprinkle dates lightly with coconut sugar.
- Bake the dates at 300℉ for 30-45 minutes or until bacon is cooked but still retains juices and fat.

Dates are packed with nutrition, so much so that regular consumption of dates during the 3rd trimester of pregnancy has led to improved outcomes in labor and delivery times. I love eating dates during pregnancy stuffed with chevre or cream cheese, but wrapping them in bacon is an indulgent delight for expectant mothers and hungry kids alike.
